Days of Being Wild is a series inspired by the tradition of lambic style brewing in Belgium. This is the first mixed fermentation program of its kind in Asia. With a mixed-culture fermentation featuring a medley of wild yeast and bacteria strains in a single foeder, these beers have haunting complexity, natural farmhouse funk and refreshing fruitiness.
Delightful complexity, tropical fruit tartness and faint funk in this vibrant new release from our celebrated foeder aged wild ale program. As most releases from this series, after extended foeder ageing, the beer matured in Chardonnay barrels and was subsequently fermented a second time with a massive load of fresh guava puree adding rich fruit flavor and lending further depth to the wild yeast driven fruitiness. Subtle notes of vanilla and coconut round the mouthfeel enhancing the overall sensory experience.
