RyeØ is an intense rye wine, aged in freshly emptied rye whiskey barrels for 9 months. After the aging process, we hand-bottle and condition it with fresh batch of bourbon yeast for a second fermentation. We let the complex rye, oak and malt flavors marry over time and gain complexity. This is a labor, time and ingredient-intensive process, which means we can only make this special beer once in a while, when all the stars align. Individually numbered bottles will be available on a limited edition basis. Enjoy it now or store in your cellar for an extended period of time.
Rye Whiskey & Bourbon Barrel Aged Rye Wine
The first vintage of RyeØ was the first barrel aged beer ever brewed in Hong Kong when we were a mere three month old operation. It helped set the tone for our brewing style and our ambition for the quality of the brewing scene in Asia. Four years since, we have amped up our barrel-ageing program and also pursuit of nearly all kinds of beer styles. This version has spent nearly a year in bourbon and rye whiskey barrels, maturing and imbibing rich woody and vanillic notes from the barrels layered on a silky base of a decadent rye wine.
